Easy Chinese Egg Fried Rice Recipe (Better Than Takeout)

This easy Chinese egg fried rice recipe is perfect for beginners. Using simple ingredients and basic cooking techniques, you can make restaurant-style fried rice at home in just 20 minutes. It's quick, delicious, and better than takeout.

  • Mixing bowl

Ingredients
  

  • 2 cups cooked jasmine rice (preferably day-old)
  • 2 large eggs
  • 2 tablespoons vegetable oil
  • 2 green onions, finely chopped
  • 1/4 cup carrots, diced
  • 1/4 cup peas
  • 1 tablespoon light soy sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper

Instructions
 

  • Prepare the Ingredients
    Wash and cut the tomatoes into wedges.
    Chop the green onions and separate the white and green parts.
    Crack the eggs into a bowl and beat until smooth.
  • Cook the Eggs
    Heat 1 tablespoon of vegetable oil in a wok over medium-high heat.
    Add the beaten eggs and gently scramble until they are just cooked.
    Remove the eggs from the wok and set aside.
  • Stir Fry the Vegetables
    Add the remaining oil to the wok.
    Add the carrots and frozen peas.
    Stir fry for 1-2 minutes until the vegetables are slightly softened.
  • Fry the Rice
    Add the cooked rice to the wok.
    Use a spatula to stir fry the rice while breaking up any remaining clumps.
    Cook for 2-3 minutes until the rice is heated through.
  • Season the Fried Rice
    Add light soy sauce, salt, and white pepper.
    Stir everything together until the rice is evenly coated.
  • Add Eggs and Finish
    Return the cooked eggs to the wok.
    Add green onions and stir fry for another 30 seconds.
    Drizzle with sesame oil and mix well.
    Serve hot.

Notes

  • Day-old rice works best because it is drier and fries better.
  • Do not overcrowd the pan, or the rice may become soggy.
  • You can add cooked chicken, shrimp, or ham for extra protein.
  • Adjust the soy sauce according to your taste.
