A classic Chinese home-style dish made with juicy tomatoes and fluffy scrambled eggs. This quick and easy tomato egg stir fry requires only a few ingredients and is perfect for beginners learning to cook Chinese food at home.

Ingredients
  

  • Eggs Beat the eggs in a bowl until the yolks and whites are fully combined.
  • Tomatoes(3 medium ripe tomatoes (about 1.5 lbs / 700g)) Cut into wedges or bite-sized pieces.
  • Cooking Oil(2 tablespoons vegetable oil) For stir-frying.
  • Green Onions(2 green onions (scallions)) Finely chopped.
  • Salt(1 tablespoon sugar) Balances the acidity of tomatoes.
  • Light Soy Sauce(1 tablespoon light soy sauce) Adds savory flavor.
  • Water(2 tablespoons water) Helps create the tomato sauce.
  • Sesame Oil (Optional)(1 teaspoon sesame oil) Adds extra aroma before serving.

Instructions
 

  • Prepare the ingredients
    Wash and cut the tomatoes into small wedges. Chop the green onions and separate the white and green parts.
    Crack the eggs into a bowl and beat until smooth.
  • Cook the scrambled eggs
    Heat 1 tablespoon of oil in a wok over medium-high heat.
    Pour in the beaten eggs and wait a few seconds before stirring. Gently scramble until the eggs are about 80% cooked.
    Remove the eggs from the wok and set aside.
  • Cook the tomatoes
    Add another tablespoon of oil to the wok.
    Add the white parts of the green onions and stir fry for about 10 seconds until fragrant.
    Add the tomatoes and cook for 2-3 minutes until softened and juicy.
  • Season the tomato sauce
    Add salt, sugar, soy sauce, and water.
    Stir everything together and cook until the tomatoes release their juices and form a light sauce.
  • Combine eggs and tomatoes
    Return the scrambled eggs to the wok.
    Gently mix with the tomatoes and cook for another 30 seconds.
    Add the green onion tops and optional sesame oil.
    Serve immediately with steamed rice.

Notes

  • Use ripe tomatoes for the best natural sweetness and flavor.
  • Do not overcook the eggs. Soft and fluffy eggs create the best texture.
  • Traditional Chinese tomato egg stir fry is slightly sweet. Adjust sugar based on the sweetness of your tomatoes.
  • This dish tastes best when served fresh with steamed white rice.
